Spicy unniyappam/ Kuzhi Paniyaram with Chutney Recipe in Malayalam

Ingredients :

For paniyaram :

  • White rice (pacheri) – 1 cup
  • Black gram lentils (urud dal) – 1/4 + 1/8 cup
  • Beaten rice ( Avil) – 4 tbsp
  • Fenugreek seeds – 1 tsp
  • Salt – 2 tsp
  • Oil – 2 tbsp + for frying
  • Mustard seeds – 1 1/2 tsp
  • Black gram lentils (urud dal) – 2 tbsp
  • Green chillies – 2
  • Red chillies – 8
  • smallOnion – 1 small

For chutney :

  • Coconut – 1/2 cup
  • Green chillies – 4
  • Tamarind – 1 small piece
  • Ginger – 1 small piece
  • Shallots – 1
  • Salt – 1/2 tsp
  • Oil – 1 tbsp
  • Mustard seeds – 3/4 tsp
  • Curry leaves – 10-15
Process :
Step 1 :

Soak 1 cup white rice, 1/4+ 1/8 urud dal + 4 tbsp beaten rice and 1 tsp Fenugreek seeds for around 6 hours. Wash all the ingredients well before soaking. Step 2 :To a mixer jar add all the soaked ingredients. Add 1/2 cup of water and grind well to get a smooth paste. Transfer it to a bowl and let it ferment for atleast 8 hours. Step 3 :Heat a pan and add 2 tbsp oil. When hot add 1 1/2 tsp mustard seeds and also 2 tbsp urud dal. When urud dal turns golden brown add some chopped curry leaves, 1 onion, 2 green chillies and 8 red chillies. Saute well till raw smell goes. Add this mixture to the batter along with salt and half cup of water. Mix well.Step 4 :Heat a paniyaram pan and add some oil to avoid sticking.when pan is medium hot add the batter to the pan. Close it with a lid and cook for 10 minutes. After 10 minutes turn the rolls and cook for 10 more minutes. Serve it to a plate. Paniyaram is ready!!!!! For chutney :Step 1 :To a mixer jar add 1/2 cup coconut, 4 green chillies, 1 shallots, small piece of tamarind and 3/4 tsp of salt and grind well.Step 2 :Heat a pan and add 1 tbsp oil. When hot add 3/4 tsp Mustard seeds. Now add the grinded coconut mixture and saute well till raw smell of the coconut goes. Serve it to a bowl. Tasty and yummy coconut chutney is ready now. Enjoy your paniyaram with chutney.
